Here’s another Super Bowl weekend healthy real food remix appetizer recipe for the big game:

Creamy Raw Cilantro Hummus served with a rainbow carrot flower display.

This was another creation like the Beet Cashew Hummus I just came up with on a whim.. and it worked!  Sometimes you can come up with great creations in the kitchen by playing around with different ingredients (I always like to encourage it.. it makes cooking homemade real foods fun and creative).

This dip is fully raw & enzyme-rich, vegan & paleo-friendly, gluten free, and dairy free.. without any of the chemicals, preservatives and junk ingredients we can find in some grocery store bought dips.

Ingredients

1 cup raw cashews, soaked 4 hours

1 cup fresh cilantro (a nice big handful, doesn’t need to be rocket science measurements here)

2 tablespoon raw tahini

4 tablespoon light coconut milk

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon garlic pepper

Optional spicy version:

1/2 teaspoon chili powder

1/2 teaspoon cayenne

Kitchen Notes:  I made it first without the spice.  Tasted great.  Then blended in the heat – nice and spicy!

Directions

1.  After your raw cashews are done soaking in water, drain and dry.

2. Add raw cashews and all your other ingredients into a blender and whiz away!  I had to stop the blender a few times and use a spatula to scrape down the sides.. just repeat that and blend until it’s nice and creamy to your liking.

3.  If you want to do the spicy version, I suggest first tasting after step 2.. then blend in a 1/4 teaspoon each of the chili powder & cayenne and give it a taste.  If you want some more heat, add the other 1/4 teaspoon of each.  That was perfect for my palate, but when it comes to spice, some people may want it less, some maybe even more.. so always be sure to taste.

I have this pictured served with a rainbow carrot flower display, but you can serve with almost any “dipping” foods.
