What’s the old saying, “An apple (cinnamon ice cream) a day keeps the doctor away”, right?

I kid of course!  Ice cream won’t necessarily keep the doctor away, but this ice cream is pretty close to being the cleanest you can find utilizing those apples!

This apple cinnamon ice cream has a grand total of three real food ingredients in it and is:

  • paleo-friendly
  • vegan-friendly
  • dairy-free
  • gluten-free
  • no sugar added
  • chemical junk-free
  • kiddo approved!

It’s a great real food recipe remix idea you can try at home that is an awesome guilt free treat that tastes silky creamy good!

Let’s dive in..

First off, if you missed the homemade Pistachio Ice Cream post, I mentioned the following in regards to how to make ice cream at home:

When making ice cream, you need one piece of equipment to make it “set it and forget it” easy to do:  an ice cream maker.

If you don’t have an ice cream maker, here are 6 other ways you can make ice cream that I found in Saveur magazine.

So you don’t need to stress it if you don’t have an ice cream maker, try out one of those other methods in the Saveur link.

However for this apple cinnamon ice cream, I used my ice cream maker because I like how I can “set it and forget it” and go about my business.. overall, saves time.

Ingredients

2 cups dried apples, reconstituted (soaked in water)

1 can full fat coconut milk

1 teaspoon cinnamon

Kitchen notes:  

1. Sweetening options: The dried apples had a nice mild sweetness to them.  If you want to add more sweet to your mixture, simply taste it after you blend all of the ingredients (see step #3 in directions below).  If you think it needs more sweet to your palate, you can try a no-sugar added option like 100% stevia, a lower glycemic sugar like coconut nectar, or a couple of my favorite raw sugar options like raw coconut sugar or maple butter.

2. Lower fat alternative:  You can use light coconut milk if you want, but it will give it a more icy texture because light coconut milk is in fact a combo of coconut milk and water, so you get that frozen water in your ice cream.  If you’re going for creamy ice cream texture, use full fat coconut milk.

3. Quick note on dried apples:  Go for organic versions of dried fruits in general.  Non-organic versions may (read: most all) have sulfites in them, specifically sulfur dioxide. It’s used as a preservative. This little guy can wreak havoc on the body, especially for people highly sensitive.  Asthma, allergy-like reactions, even death.

Directions

1. Add your apples to a bowl with some water and let them plump up for a couple hours.

2. Once they’re reconstituted, drain the water they’re in and dry off excess water on them.  

3. Add your apples to a blender with your coconut milk and cinnamon and blend until everything is incorporated (note: after blended, give it a quick taste for sweetness if you like it to your palate. You can add more if you’d like from sweetening options above and keep tasting to your palate).

4. Add your mixture to your ice cream maker and let it mix for about 20-25 minutes… set it and forget it!  

Simple as that.  3-ingredient real food ice cream is ready to serve.
