I found out last week that Trader Joe’s is now carrying ready-made cauliflower rice (and life just got a whole lot easier!), which promptly got me motivated to make a new caulirice recipe this week for my meal prep.

Cauliflower rice, or “Caulirice”, is one of my go-to grain-free additions to many of my meals during the week.  I’ll meal prep a big batch and have a convenient, healthy real food refrigerator “grab” anytime I need it.  

Cauliflower can obviously be bland by itself, so the key to making a tasty caulirice is adding different combos of flavor and spices.

This particular caulirice I wanted to add a garam masala flare, an Indian spice blend consisting of spices like cardamon, cinnamon, cloves, cumin, black pepper and coriander; so I loaded it with veggies, fresh turmeric, ginger, garlic and more and it turned out to be great flavor combos.

This dish is fairly quick to make and goes great with just about any protein source of your choice.  And if you do like I do, double this recipe up as a meal prep and it will last you over 8-12 meals as a nice side.  At about 15 minutes to make this dish, over that many meals, is 1-2 minutes a meal throughout your week… It’s hard to put a real food meal together in 1-2 minutes, right?   So that’s FAST timing in the kitchen when we’re on the GO GO GO, especially during our busy week.

INGREDIENTS

Servings:  4-6

1 large cauliflower, grated (about 4 cups)

1 cup frozen carrot & peas*

1 handful snow peas (about a cup)

1 cup cilantro, chopped

1/2 large onion, diced

1/2 cup scallion, sliced (green part)

1 teaspoon fresh turmeric, minced

2 teaspoon fresh ginger, minced

4 cloves garlic, minced

1/2 cup raw cashews, chunks

1 tablespoon garam masala

1 teaspoon pink salt

1 tablespoon coconut oil

Kitchen  Notes:

1.  *I’m not huge on frozen veggies in general because we don’t know how long from picked to transport to shelf to frozen they’ve been (unless fresh grown and frozen or purchased fresh and we freeze ourselves), but for this particular dish I do it because it’s easy.  Remember, 80/20…

2.  If you can’t find fresh turmeric root, you can use ground turmeric powder (try and find the fresh stuff though!).

3.  Enjoy this as a vegetarian meal or add your favorite integrity-sourced animal food like beef, chicken, fish.

METHOD

1.  Add a big saute pan to the stove on medium heat, and begin to prep all ingredients.

Specific prep notes:

  • Carrots & Peas:  If you’re using frozen bag, pull these out first so they can begin to defrost a bit.
  • Cauliflower:  use a grater or food processor to turn the cauliflower into “rice” form.  I like my food processor, but lately have been liking my grater a lot more.  I simply grab the cauliflower by the stem and grate the entire head on the big “teeth” of my grater as much as I can down to the stem (careful with your fingers and knuckles).  Left over stem I toss in my composter.
  • For fresh turmeric and ginger, slice the outer skin off and then chop it so it’s finely minced.

2.  Add coconut oil to pan, let it melt and coat the pan.

3.  Add onion and let it sizzle for 4-5 minutes, or until starts to get translucent, tossing it every 1-2 minutes.

4.  When onion translucent, turn heat to LOW and add cauliflower, carrot & peas, garlic, turmeric, ginger, garam masala and pink salt.  Toss everything together really well.  

5.  Let everything saute for another 4-5 minutes on low, tossing every 1-2 minutes.

6.  Add snow peas and cashews.  Toss everything.  Add lid and let it all marry for another few minutes.

7.  Lid off and heat off, and finally add 3/4 of the cilantro and scallion, toss everything well and serve.

8.  Use the little bit of leftover cilantro and scallion to top off each plated serving with a good pinch of each (if you’re not doing this, toss it all in at step 7).
