When we make homemade raw nut milk, we have all that great nut pulp left over at the end.  What to do with it?

How about a decadent, healthy dessert like chocolate fudge!

I’m not keen on wasting food, so I came up with this raw chocolate fudge made from the left over raw nut milk pulp.  I wasn’t sure if it was going to work for taste, but as Julia Child once said, “no one is born a great cook, one learns by doing.”  Well I did these expecting to have to go back to the drawing board with the recipe, but they turned out great.  This fudge is paleo and vegan-friendly, gluten-free, dairy-free and has zero added processed sugar.

Ingredients:

1/2 cup raw nut pulp (from your homemade nut milk)

1/2 cup almond flour

1/2 large banana or plantain

4 tablespoons raw cacao powder

2 tablespoons coconut nectar

1/3 cup coconut milk

1 tablespoon coconut oil

1 teaspoon pink salt

Left over chopped nuts

Directions:

Put all your ingredients in a food processor or blender.  Blend until all ingredients are mixed well.  Line a glass dish with parchment paper and add your blended mixture.  Top off the dish with same crushed raw nuts as pulp.  For example, if you use almond milk nut pulp, top off with crushed raw almonds. Seal glass container and add to freezer for about 2 hours, or until hard.  Once it’s hard, remove your fudge from dish and slice into chunks.  Indulge or place back in freezer when you’re ready to eat.
